Aged Vanilla Chocolate Chip Cookies (Makes 3 ½ to 4 dozen cookies)
Ingredients:
  • ¾ Cup cane sugar
  • ¾ Cup packed brown sugar
  • ½ Cup butter softened – not melted (1 Cube)
  • 1 tsp aged vanilla extract
  • 1 Egg
  • 2 ¼ Cups of all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 Cup semi-sweet chocolate chips (6 ounces or ½ of a 12 ounce bag)
  • 1-2 Tbsp Milk
Preparation:
  1. Preheat oven to 375°F.
  2. In a large bowl, mix: cane sugar, packed brown sugar, softened butter, aged vanilla extract, and egg until smooth and light.
  3. In a separate bowl, mix: flour, baking soda, and salt (ensure salt and baking soda are well sifted into the flour).
  4. Slowly mix the flour mixture into the other ingredients until a dry and clumpy dough forms.
  5. Add 1-2 tablespoons of milk to the dough until dough becomes smooth and packs well.
  6. Stir in chocolate chips by hand.
  7. Ensure the cookie sheet is lightly greased or non-stick.
  8. Roll about 1½ inch balls of dough using your hands; lightly flatten each ball on the cookie sheet using the tips of your fingers. Space the cookies about 2 inches apart.
  9. Bake 8 – 10 minutes or until sides of the cookies are light golden brown.
  10. Carefully remove the cookies from the hot cookie sheet and place on a wire rack to cool.
  11. Allow 6-8 minutes for cooling before eating. Aged Vanilla flavor is most prominent in a cooler cookie; often best a couple of hours after all the flavors have time to settle.
  12. Store cooled cookies in an airtight container and best if consumed within 3-5 days. Cookies can also be frozen in a freezer zip lock and stored for later use if desired.
